The funky monkey is an easy-to-make smoothie that contians a full serving of dairy and fruit. With its chocolate taste, kids love it. Here is a low-sugar version that is great for a breakfast/lunch replacement or as a pre/post work-out snack.
Ingredients:
~ 2 cups of chocolate almond milk OR milk with a couple scoops of cocoa powder
~ 3 tablespoons of plain yogurt
~ 1 1/2 tablespoons of unsweetened, shredded coconut
~ 1 ripe banana
~ 1/2 a cup of ice
Directions:
Blend and enjoy! (Makes 2 servings.)

Quick Meal: Vegetable Fried Rice

Quick Meal: Iron-Rich Stir Fry
Shrimp, tofu, and kale - all iron rich - on top of a bed of noodles.
Directions:
-Boil noodles seperately
-Heat butter and olive oil in a metal skillet over medium heat
-Add chopped tofu (whatever firmnesss you prefer/soft used here) to the skillet and heat for approx. 5 minutes. Add a little water when the olive and butter dry down
-Add a tablespoon of ground ginger, 2-3 tablespoons of hoisin sauce, 1/2 a tablespoon of garlic powder and a sprinkle of salt to skillet. Stir.
-Add a handful of chopped kale, at which point, the liquid will begin to dry down quickly. Add shrimp then noodles. Stir.
-Once shrimp are fully cooked, remove from heat.
Total cooking time: 10 minutes
